Sprouted bread is said to be more nutritious, and Julieanna Hever, certified plant-based dietitian, confirmed this is true. “Some of the nutrients are retained and better absorbed when sprouted as opposed to a further processed bread,” Hever told POPSUGAR. “Nutrients may be more readily absorbed in the body when they are sprouted prior to consumption.”
When you sprout grains, you eliminate phytic acid, an enzyme inhibitor that isn’t easily processed by the body. That’s why sprouted bread is said to be easier on the digestive system.
If you’re sensitive to gluten, sprouted bread might be a good choice for you. Although it’s not entirely void of gluten, it does contain less gluten than your average wheat bread. Additionally, sprouted bread contains more protein, as well as less fat and carbohydrates than the other stuff you find in the bread aisle.
